Bun Dough 25 Use your favorite formula.
Butter Softenend 1
Garlic Minced 4 cloves
Sesame seeds 5
Poppy seeds 7
Whole Eggs Beaten 2
Scallions Chopped 2
Sharp cheddar cheese 6
1/2-in cubed

Total appr. wt. 34 14

INSTRUCTIONS:

Flatten dough on bench. Smear butter over dough. Sprinkle with garlic, sesame seeds and poppy seeds. Pour eggs in middle of dough. Sprinkle with scallions and 3 lbs. cheddar cheese; fold dough together. Using a bench scraper, chop dough into small pieces. Scale dough into 1 lb. 4 ozs. pieces, flatten into parchment-lined 8-in. pans. Top with remaining cheese. Bake at 400°F until golden, about 25 minutes. Yields about 28 breads.
