Honey spice layer cake

SPICE BLEND:

Cinnamon 1 oz.

Allspice 1/2 oz.

Mace 1/2 oz.

Combine.


CAKE:

Honey 14 oz.

Water 14 oz.

Sugar 11 oz.

Light brown sugar 10 oz.

Combine. Mix at 1st speed of 3-speed mixer until sugars are dissolved, about 2 minutes.


Cake flour 1 lb. 11 oz.

Nonfat dry milk 3 oz.

Baking powder 1 1/2 oz.

Salt 3/4 oz.

Spice blend 1/2

Cake shortening 14 1/2 oz.

Emulsifier, cake-type 1/2 oz.

Combine; add to above. Mix at 1 st speed for one minute. Increase to 2nd speed and mix for four minutes.


Eggs 14 1/2 oz.

Water 7 oz.

Slowly add with mixer running at 1st speed.


Egg whites 2 oz.

Vanilla 1/3 oz.

Add slowly, mix at 1 st speed for 4 minutes.


Instructions: Deposit 14 ozs. batter into greased parchment-lined 9-in. cake pans. Bake at 360·F for 25 minutes. Yields about eight 9-in. Iayers.
