Peachy spice bread


Ingredients / Lbs. Ozs. / Method


Spice mixture:

Sugar 1-1/2 oz.Blend together.

Cinnamon 1 tsp.

Cardamon 1/4 tsp.

Nutmeg 1/2 tsp.

Allspice 1/4 tsp.

Total appr. wt. 2 oz.


Bread:

Yeast 2 oz.

Sugar 3 oz.

Mix together in large bowl.


Frozen, diced peaches thawed, drained 1 lb. 8 oz.

Eggs 3 oz.

Flour 1 lb. 8 oz.

Salt 1/2 oz.

Combine. Add to yeast-sugar mix. Mix at 1st speed of 3 speed mixer until dough forms.


Unsalted butter, melted & cooled 6 oz.

Add to above, mix at 2nd speed for cooled about 20 minutes or until dough is smooth and elastic.


Unsalted butter, melted 2 oz.


Instructions: Proof dough until doubled; punch down and divide into two pieces. Roll each piece into a rectangle. Brush with melted butter and sprinkle with spice mixture. Roll up; place into greased bread pans and proof until doubled. Bake at 350·F for 45 minutes. Yields two 9- x 4-in. Ioaves.
