EXTENDED SHELF LIFE OIL
Asoyia ULTRA low linolenic soybean oils are the first in the ultra low lin (linolenic) category. Asoyia ULTRA Low Lin is a specialty soy oil containing 1.5 percent or less linolenic acid content, a polyunsaturated fatty acid. Higher levels of linolenic acid cause oils to become rancid more quickly. Compared to “low lin” soy oils that contain 3 percent linolenic acid, ULTRA Low Lin has the lowest linolenic acid content available in a soy oil today. While the difference may seem minimal, the distinction lies in the formulation and savings advantages to its users. ULTRA Low Lin oils remain stable two to three times longer than commodity oils and deliver longer fryer life with very little flavor transfer.

These high-performance, bio-based, biodegradable, NSF H-1 registered, food grade lubricants are manufactured and fortified with boron nitride. The boron nitride will provide a light, clean lubricating powder after the bio-based oil cleanly dissipates. They will lubricate at extremely high temperatures, up to 1000°F. STABILIZE WITH A CLEANER LABEL
Flour contains a low level of free lipid material. Of these lipid materials, 35 percent are polar with the balance being non-polar triglycerides. The polar lipids-phosholipids and galactolipids-play an important role in improving dough stability. With Lipopan Xtra®, a lipase from Novozymes, these compounds become even more polar and stabilize the dough. The amount of emulsifier that can be replaced depends on bread type, flour quality and the baking process used. Many bakers have been able to replace 100 percent of their strengthening emulsifiers. A cleaner bread label is a valued benefit today. In addition, the bakery typically reduces its dough strengthening costs by 25 percent to 30 percent when replacing emulsifiers with lipase technology.
