Applesauce-date muffin
Ingredients / Lbs. - Oz. / Method
Butter 2 lb.
Brown sugar 2 lb. 8 oz.
In 20-qt. bowl, using a paddle attachment, cream together at 2nd speed of 3-speed mixer.
Whole eggs 14 oz.
Add at 2nd speed until blended.
All-purpose flour 2 lb. 8 oz.
Baking powder 1.25 oz.
Baking soda .5 oz
Cinnamon .5 oz.
Salt .5 oz.
Applesauce 3 lbs. 4 oz.
Combine dry ingredients. Slowly add at 1 st speed alternating with the applesauce until all ingredients are well blended.
Dates, chopped 2 lbs.
Rolled oats, regular 2 lbs.
Slowly add at 1 st speed just until blended.
Instructions:
Using a No. 8 scoop, deposit batter into prepared muffin tins. Bake at 375 degrees F. for 25-30 minutes. Yields about 6 dozen muffins.
