Low-cholesterol walnut scones
Ingredients Lbs. Ozs. Method
Margarine 1 lb. 8 oz.
Whole wheat flour 2 lbs.
Baking powder 1-1/2 oz.
Baking soda 1/3 oz.
Combine whole wheat flour, baking powder and baking soda. Cut margarine into flour mixture and mix at 1st speed of 3-speed mixer until mixture resembles coarse meal.
Bread flour 8 oz.
Egg whites 12 oz.
Honey 6 oz.
Rolled oats 10 oz.
Raisins (conditioned in orange juice) 14 oz.
Yogurt, non-fat or low fat 1 lb. 4 oz.
Walnut Pieces 1 lb.
Add to above mixture. Mix at 1st speed just until incorporated.
Instructions: Roll out dough onto floured surface to about 2-in. thick. Cut scones using a biscuit cutter. Place on a paper-lined sheet pan or well-oiled sheet pan. Bake at 350 F for 12-15 minutes. Yields about two dozen scones.
