Cheese Easter bread
Ingredients / Lbs. / Ozs. / Method
Active dry yeast 1 lb. 1-1/2 oz.
Water-- warm 6 oz.
Dissolve yeast in water
Sugar 1 oz.
Salt l/2 oz.
Combine with yeast. Stir until dissolved.
Bread flour 3 lb. 12 oz.
Butter 1 lb. 2 oz.
Whole eggs 14-3/4 oz.
Egg yolks 8 oz.
Cheddar cheese, shredded 12 oz.
Add to above. Mix at low speed for about 2 minutes, mix at medium speed for about 10 minutes.
Cheddar cheese, for garnish
Instructions: Proof dough twice. Divide into six equal portions. Divide each portion into 3 equal pieces and roll into ropes. Braid 3 ropes together, shape into a circle and seal ends. Repeat with remaining dough. Brush with egg white and garnish with additional cheddar cheese. Bake at 425·F until golden brown, about 45 minutes. Yields 6 braided loaves.
