Hazelnut maple bread


Ingredients / Lbs. - Ozs. / Method


Flour4 lb. 14 oz.

Sugar 1 lb. 7 oz.

Baking powder 2-5/8 oz.

Salt 1 oz.

Combine in 20-qt. mixing bowl. Using a paddle attachment, mix at 1 st speed of 3-speed mixer for 1 minute.


Hazelnut butter 13 oz.

Bananas, 1/2-in.slices 1 lb. 8 oz.

Add. Mix at 1 st speed for 1-1/2 - 2 minutes until blended. Scrape bowl.


Milk 1 lb. 4 oz.

Whole egg 1 lb. 9 oz.

Maple syrup 1 lb. 4 oz.

Maple extract 2-3/4 oz.

Vanilla extract 1-1/4 oz.

Blend together; add. Mix at 1 st speed just until blended, about 30 seconds. Do not overmix. Scrape down.


Hazelnuts, medium diced 1 lb. 4 oz.

Stir in.


Instructions: For each loaf, deposit 1 lb. batter in greased 8-by-4-by-3-in. Ioaf pan. Bake at 350_F about 40-45 minutes. Yields 14 1-lb. Ioaves.

Note: Canned, pureed bananas may be substituted for fresh bananas.
