No cholesterol walnut Irish soda bread


Inaredients / Lbs. Ozs. / Method


Bread flour 100 lb.

Baking powder 3 lb.

Baking soda 1 lb.

Salt 1 lb. 4 oz.

Sugar 7 lb. 8 oz.

Nonfat milk powder 7 lb.

Soybean oil 10 lb.

Water 70 lb.

Caraway seeds 10 oz.

Raisins 15 lbs.

Walnuts, chopped 30 lbs.

Combine. Mix at 2nd speed of . 3-speed mixer until thoroughly blended. Dough temperature should be 78 degrees F.


Instructions: Scale into 1-lb. pieces. Shape into 8-in. rounds and place in 8-in. greased pie tins. Using a sharp knife, cut X's into loaf tops. Bake at 350·F until golden, about 50 minutes. Yields about 20 dozen 1-lb. Ioaves.
