Cranberry bread formula
Just in time for the holiday season, try this festive quickbread formula complemented by your choice of spices and garnish.

| Bread flour | 70 | 8 | Mix for 2 minutes on slow speed, 6 minutes on fast. |

| Bread improver | 1 | 4.8 | |

| Brown sugar | 2 | 3.2 | |
| Ground spice blend | 8.5 | ||
| Water | 39 | 11.2 | |
| Ocean Spray sweetened dried cranberries | 35 | 4.8 | Add; mix again on slow speed for 2 minutes. |

Instructions
Scale dough into 1.06-lb. pieces, place in prepared 7-in. rounds or loaf pans and brush with egg wash.
Sprinkle with white, brown or nib sugar. Garnish with nuts (optional).
Bake at 365º to 374ºF for 25 to 30 minutes.
Yield: 147 loaves
