Hawaiian Slices Puff Pastry

6 lb Old danish
2 lb Pineapple pie filling
2 lb Cherry pie filling
1/4 of a full sheet of Puff Pastry dough (formula below)

Mix by hand on sheet pan until mixture is sticky.
Roll puff dough on sheeter.
Smear danish mixture on dough about 1/2 way.
Roll one time.
Bake in one piece. The length of sheet pan.
Bake at 400° F. for 20 to 25 min.
Cut into slices - lay flat. Drizzle with danish glaze.
Suggestion: we make this item in a mini size to large size.





Basic Puff Pastry

7 1/2 qt Water
1/2 oz Lemon flavor
1 oz Yellow color
24 lb Bread flour
6 oz Salt
1 lb 8 oz All purpose shortening

Roll in:

3 lb 8 oz Cake shortening
3 lb 8 oz Roll-in margarine or roll-in shortening

Mix first six ingredients in 3rd speed.
Makes 3 pieces. Scale 13 lb 14 oz.
Roll in: roll this in each piece. Fold in thirds.
Then roll each piece four more times through sheeter.

Oh. My. Goodness. I have been looking for this recipe for YEARS. There used to be a great bakery outside of P.A. Bergner's at the Peru, Illinois mall back in the 70's that made these, and I just loved them. I was just a kid then. We moved away; the bakery closed; and, as an adult, I always wondered what was that wonderful mystery filling. I only could remember that it had fruit and bread together, and was wrapped rather like a beef wellington :-) before being sliced and frosted. Thank you SO much for sharing this. Magical memories...
