Formula Exchange: Mango brownies

Ingredients Lbs. Ozs. Method
Unsweetened chocolate   12 Melt over a double boiler.
Set aside to cool
Whole wheat flour 1 8 Combine and set aside
Cinnamon   0.5  
Salt   0.5  
Olive oil 1 8 Combine.
Vanilla extract   0.5  
Almond extract   0.25  
Light brown sugar 3   Add; mix well.
Eggs, 12 large 1 8 Add slowly to oil mixture. Stir in cooled chocolate. Fold in flour mixture.
Chopped walnuts 3   Fold in the nuts and half the chopped mango.
Mangos, 12 ripe, peeled, pitted, diced and divided      

Total appr. wt. 13 14.35  

Instructions

Pour batter evenly into 6 prepared 8-in. by 8-in. pans. Sprinkle remaining mango over the top of the batter. Bake at 350°F for 40 minutes. Yield: 96 servings
