Brownie pops perk sales

Cupcakes may be all the rage, but these brownies on a stick could be the next big thing for your bakery. Great Dane Bakery, with locations in Los Alamitos and Huntington Beach, Calif., sells about a dozen a day at $4.50 each. The brownie pops combine the chocolatey goodness of brownies with the decorations and portability of cupcakes, said Head Decorator Theresa Torrealba. “The cupcakes with characters sold so well that we decided to try it on brownies,” she added. The bakery keeps the child-centric brownie pops in the showcase at all times.

Use a clean soup can, with both ends removed, to cut a sheet pan of chilled brownies (without nuts) into circles. If the can becomes sticky, rinse it with hot water.

Place a soda can under the soup can to remove the brownie. Press the soup can down onto the counter, and the soda can will push the brownie out.

Insert a flat stick into the center of the brownie. (Brownies with nuts can cause problems when inserting the stick.) Place the brownies on a tray and freeze.

By freezing the brownies, they will not fall off the stick when you coat them with melted chocolate coating.

Place the coated brownies on a tray lined with parchment paper, and chill to harden the coating.

Pipe a small amount of fudge icing onto a small, circular board to adhere the brownies to the board. Then, pipe designs as desired.
