Reduce Staling With Crumb Softeners

The Stay Soft line of crumb softeners from Watson Bakery Ingredients Division reduces staling. Stay Soft allows bakers to reduce store deliveries and short production runs, the company says. The line includes five varieties that are ideal for breads, rolls, bagels, muffins and sweetgoods. The line also includes an extended shelf life variety that is ideal for breads older than 10 days.
