Cream puffs still reign in Wisconsin
The Wisconsin Bakers Association entered into a new contractual
agreement with the Wisconson State Fair that allows the WBA to
operate the State Fair Dairy Bakery as an independent operation.
For 82 years, the Wisconsin State Fair has been home of the
“Original Cream Puff”, which have become the icon
dessert food at the fair.
“Our continued commitment to the quality, service and truly
unique family experience has always been and will continue to be
the essence of our business at the Wisconsin State Fair,”
said Dave Schmidt, WBA executive director and State Fair Dairy
Bakery manager.
The new relationship was designed to reduce cost for the state fair
and provide a strong financial basis for the WBA.
With streamlined production and modern equipment, the bakery can
sell up to 45 cream puffs per minute through six sales windows.
Over the course of the 11-day fair, the bakery sells nearly 400,000
cream puffs and generates $1 million, according to
Schmidt.
