The National Honey Board, Firestone, Colo., is supporting the baking industry by offering a full scholarship to AIB International’s Baking and Science Technology Course in Manhattan, Kan. The scholarship provides one student full tuition for the 16-week course, which focuses on baking science, production management, bread and roll production, and cakes and sweetgoods production.

“The National Honey Board strongly believes in supporting the growth and promotion of the baking industry through education and hands-on instruction, and AIB is the perfect platform to groom a new generation of baking professionals,” said Charlotte Jordan, National Honey Board’s project manager.

The Baking Science and Technology course is offered twice a year, teaching students how to develop new products and consistently produce quality bakery foods. They also formulate new products with honey to capitalize on the ingredients’ ability to provide exceptional flavor properties.

“Thanks to the National Honey Board for making available scholarships for persons wanting to become professional bakers, managers, research and development, and quality assurance persons in commercial baking,” says Ken Embers AIB International’s manager, career development. “This class is developing several new products with honey, such as honey and nut bread, wheat and bran buns, bran ginger muffins, raisins granola cookies, and whole grain muffins.”

The National Honey Board is a federal research and promotion board that conducts research, offers technical assistance and promotes programs to expand domestic and foreign markets for honey and honey products. These programs are funded by an assessment of one cent per pound on domestic and imported honey.
