Oregon bakery capitalizes on craft spirit craze

Beaverton Bakery and Indio Spirits created a line of boozy cakes to appeal to Oregonians' love of craft spirits.

Beaverton Bakery, Beaverton, Ore., is seizing on Oregonians’ love affair with craft distilling by teaming up with distiller Indio Spirits in Portland to launch a line of spirited cakes, according to OregonLive.com. The cakes are available at the Old Town Beaverton location in 9-in., 1 1/2-layer tortes or by special order. The varieties include:

• Blood orange mandarin chiffon–Mandarin oranges are macerated overnight in Indio Blood Orange Vodka and combined with whipped cream to make the filling for the blood orange vodka-soaked cake;

• Whiskey fudge cake–fudge cake is spritzed with Snake River Stampede Whisky and filled with whiskey custard, then iced with chocolate ganache and drizzled with whiskey-infused caramel sauce; and

• Marionberry whipped cream cake–chiffon cake is spritzed with Marionberry vodka, filled with compote made from local marionberries and iced with sweetened whipped cream.
