At its first-ever Taste Tomorrow event, Puratos revealed the results of a global consumer survey examining perceptions of bakery, patisserie and chocolate across various regions and cultures.
According to the survey, consumers worldwide are becoming more sensitive to how food is produced. As a result, transparency and authenticity play a key role in the sourcing, development and production process of food products. Consumers’ increased awareness also goes hand in hand with a more critical attitude, reflected in seemingly paradoxical consumer behavior. For example, consumers demand food to be beneficial to their health but they also want to be able to indulge.
Attitudes towards the future of bakery, patisserie and chocolate vary greatly in different parts of the world. Western consumers in mature markets are increasingly skeptical about the future of food whereas Asian consumers adopt a more positive attitude, for example.
The trends are derived from global research conducted in 14 countries by InSites Consulting with the goal of enhancing customer knowledge about important macro-economic and consumer trends impacting the bakery, patisserie and chocolate sectors, and to provide ideas for innovative product development.
Taste Tomorrow is an initiative and platform for knowledge-sharing among key bakery, patisserie and chocolate industry players. The kick-off event was held in Guangzhou, China. Puratos will host a series of events in different parts of the world, in search of emerging food sector trends.
