Pennant Foods recently completed renovations and expansion of its flagship bakery facility in Northlake, Ill. The $4 million expansion, which has doubled plant capacity, is dedicated to the production of puff pastry. Pennant’s Northlake bakery plant produces a full line of puff pastry, including bulk squares, slabs and sheets, and pre-formed freezer-to-oven pieces used by foodservice chefs, retail operators and in-store bakeries. The project took five months to complete.
