Hawaiian Slices Puff Pastry
|6 lb||Old danish|
|2 lb||Pineapple pie filling|
|2 lb||Cherry pie filling|
|1/4 of a full sheet of Puff Pastry dough (formula below)|
Mix by hand on sheet pan until mixture is sticky.
Roll puff dough on sheeter.
Smear danish mixture on dough about 1/2 way.
Roll one time.
Bake in one piece. The length of sheet pan.
Bake at 400° F. for 20 to 25 min.
Cut into slices - lay flat. Drizzle with danish glaze.
Suggestion: we make this item in a mini size to large size.
Basic Puff Pastry
|7 1/2 qt||Water|
|1/2 oz||Lemon flavor|
|1 oz||Yellow color|
|24 lb||Bread flour|
|1 lb 8 oz||All purpose shortening|
|3 lb 8 oz||Cake shortening|
|3 lb 8 oz||Roll-in margarine or roll-in shortening|
Mix first six ingredients in 3rd speed.
Makes 3 pieces. Scale 13 lb 14 oz.
Roll in: roll this in each piece. Fold in thirds.
Then roll each piece four more times through sheeter.
