2 lbs. 4 ozs. unsalted butter, softened
1 lb. 12 ozs. granulated sugar
15 ozs. brown sugar
6 large eggs (appr. 10 ozs.)
0.5 ozs. vanilla extract
6 large bananas (appr. 1 lb. 5 ozs.), finely chopped
15 ozs. instant oats
3 lbs. 4 ozs. flour
0.5 ozs. salt
1 oz. baking powder
2 lbs. California walnuts, toasted and chopped
Total appr wt: 13 lbs. 3 ozs.
Mix the butter and sugars together until smooth.
Add the eggs and vanilla extract; mix until combined.
Fold the bananas, oats, flour, salt, baking powder
and walnuts into the mixture until combined.
Scoop 1.1-oz. portions onto prepared baking sheets, leaving 1 1/2 ins. between cookies.
Bake at 350°F for about 15 minutes, until light brown.
Cool on racks.
Yield: about 180 cookies
