The Bread Bakers Guild of America (BBGA) will offer a class in April to teach professional bakers how to make handcrafted bagels, bialys and pretzels. Certified Master Baker Jeffrey Hamelman, bakery director at King Arthur Flour Co., will teach the class on April 20-21 at King Arthur Flour in Norwich, Vt.
Participants will learn to make German-style lye-dipped pretzels, bialys in the Polish tradition and classic bagels, as well as variations on the basic formulas. The class is part of the BBGA’s mission to shape the skills and knowledge of the artisan baking community.
