The Brilliant convection oven from Werner & Pfleiderer features the Duo Steamer System, two separate steam systems that yield crispy crusts and are ideal for baking frozen dough. An electrically operated in-store fan oven, the Brillant is equipped with a WP Variopilot to continuously regulate the fan speed.
The Brillant features a baking area of 13.96 sq. ft. to 32.44 sq. ft. and a capacity of 80 to 200 rolls, which keeps production moving briskly.
