King Arthur Flour has been providing consistent, all natural flours to the baking industry for over 200 years. The specifications for our lines of conventional and organic flours are held to very tight ranges. The protein does not vary more than +/- 0.2% and ash not more than +/- 0.02%. Similarly tight specifications are held for mixing performance. Our line of conventional flours are malted and enriched, while our organic line is malt and unenriched.

Both our conventional and organic flour lines offer enough choices to meet just about any baking application.

Sir Galahad (conventional, 11.7% protein, 0.48% ash) and Select Artisan (organic, 11.3% protein, 0.56% ash) are perfectly suited for breads that require a flour with lower protein content. Their versatility is such that they can also serve as an "all purpose" flour for the production of muffins and other sweet goods.

KA Special (conventional, 12.7% protein, 0.48% ash) and Baker's Classic (organic, 12.7% protein, 0.58% ash.) are bread flours milled from Hard Red Spring wheat. Their protein and mixing performance characteristics make them suitable for a wide array of bread baking styles.

Sir Lancelot (conventional, 14.0% protein, 0.52% ash) and "Big-O" Hi-Gluten (organic, 14% protein, 0.56% ash) are true "hi-gluten" flours. They both mix into strong doughs making them perfect for bagels, hard rolls, and thin, hand-stretched pizzas.

KA 100% Organic Whole Wheat. A beautiful, fine whole wheat flour milled from a blend of hard red and hard white wheats. The fine grind of this flour makes it suitable for the widest array of whole grain baking applications.

KA White Whole Wheat. Prepared from 100% Hard White Wheat, this flour provides a whole new taste profile for whole grain products. This flour is lighter in color, and most people find that the taste is considerably milder than traditional whole wheat giving products made from it a wider appeal among people trying to add more whole grains into their diet.

*NEW* KA Unbleached Cake Flour (available in either organic of conventional forms). This is a brand new introduction to our line of flours. Through a novel milling technique this flour delivers the performance of a bleached cake flour while keeping your product as clean as your customers are starting to demand. This flour will be available in both organic and conventional versions.
