On occasion, bakers of fresh product need to reflect on what is right about their trade. This year, the need to focus on the positive is even greater with the wide-ranging pressures challenging bakery profitability in the current economy. During challenging times, true leaders stand out to support their business and their industry. Behind every successful bakery are seven key areas of excellence: commitment to quality, training, marketing, profitability, management, merchandising and industry service. Modern Baking’s annual Leadership Awards issue recognizes retail, in-store, foodservice and specialty wholesale bakers that are the cream of the crop in at least one of the seven categories. The following pages detail their steps for success in each of these categories. Supporting the bakers are leading allied companies whose products and services reflect their valued contributions.
